  • 2 cups warm water
  • 1 teaspoon salt
  • 1 tablespoon finely crushed garlic
  • 2 teaspoons dried oregano
  • 1 teaspoon crushed red pepper
  • 5 cups flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Romano cheese
  • 6 tablespoons olive oil
  • 1 tin anchovy fillets packed in olive oil

Directions:

  • Take small bowl, and mix the yeast and sugar with the warm water and let it stand until foamy for about 5 to 15 minutes.
  • Now take a large bowl, mix the salt, garlic, oregano, red pepper, and 2 cups of the flour along with the yeast mixture and beat to mix well. Add 1 cup of the remaining flour and mix the mixture with your hands to make it smooth.
  • Add both the cheeses in the mixture and blend it well. Add the left over flour in 1/2 cup increments, and mix with your hands to form manageable dough and it should be slightly wet but yet dry enough that it does not stick to your fingers. Mix until it gets smooth, for about 5 minutes.
  • Brush or spread the olive oil in a large, clean bowl. Place the mixture in the bowl, so that it gets coated and does not stick in the bowl. Now cover the mixture with plastic wrap or you can also use a damp clean kitchen towel and set it aside to rise in a warm, for about 1 hour.
  • After 1 hour, punch the dough down and divide into 2 equal portions. Now shape each portion into a round loaf and carefully place them on a greased baking sheet.
  • Thickly chop half of the anchovies. Then with the help of your finger, poke them into an equal number of 1-inch deep holes into each loaf and add some of the chopped anchovies inside every hole. Add in each loaf with 1 tablespoon of the olive oil. Cover the loaves freely with plastic wrap and set them aside in a warm place, for about 1 hour.
  • Preheat the oven to 350 degrees. Divide the left over whole anchovy fillets between the tops of the 2 loaves in a decorative way and apply each loaf with half of the remaining olive oil.
  • You need to bake for 30 to 50 minutes, or until the loaves become golden brown or becomes hollow when they are tapped. Finally, the Anchovy Bread is ready to serve
